Italian turkey meatballs:
1 lb lean ground turkey
1/4 cup milk
1/2 cup whole wheat seasoned breadcrumbs (Winco bulk is where I found mine)
1/2 tsp salt, 1/2 tsp pepper
1/4 cup grated parmesan cheese (optional)
1/3-ish cup grated zucchini (optional)
Mix it all up! I end up using my hands to mix well, roll into balls and bake on a cookie sheet with parchment paper (or a rack like the above picture). I cook them at about 375 for 12 minutes, then turn over. They’re done when they’re toasty brown. Delicious on zucchini noodles, rice, with tomato sauce, or plain! I’m about to go make another batch right now =)
