Cleaned up Sloppy Joes!

When I find a recipe that’s clean and healthy, and my whole family will eat it and love it, and I don’t have to make 19 dinners, (yet still hear whining), it’s like the healthy food gods are smiling down on me for I’ve hit the FOOD JACKPOT.

Behold: Sloppy Joes “I made em extra sloppy for yous” (name that movie). It’s a recipe from Rachael Ray, that I have tweaked, to make us healthier. Cuz that’s what I do =)

Chipotle-Stout-Sloppy-Joes2
1-1 1/4 pounds lean ground turkey
1/4 cup coconut sugar (I use a little less)
2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning (lower sodium)
1 medium onion, chopped
1 small red bell pepper, chopped (I’ve also added grated zucchini)
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce (I use lower sodium)
2 cups tomato sauce (look for no sugar)
2 tablespoons tomato paste (look for no sugar)

*tip: I grate or very finely chop all the vegetables. That way my kids don’t notice them in there!
Heat a large skillet over medium high heat. Add meat to the pan. Spread the meat around the pan and begin to break it up. Combine coconut sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer.

For my kids, I serve it on a bun and they love it. Good amount of protein and veggies.

I like lower carb versions on Sandwich thins. Also, I love to throw it on a bed of spinach or arugula, with a little low fat cheese or avocado and hot sauce for a kick. Oh, I’ve also eaten it on top of spaghetti squash.. I kind of just love it with everything! =)
