While on the subject of healthy Super Bowl snacks, I remembered a BBQ meatball recipe posted by my friend and fellow bikini competitor Trish @spoonsandbells on Instagram-check her out for delicious, healthy recipes, she is awesome! =)
So this is what I’ll be making for the Super Bowl tomorrow. I just made a batch and they smell amazing! I tweaked her original recipe just a bit. Here’s the how-to:
1 pound lean ground turkey
1 cup oats
1/4 cup chopped onion
1/2 TBSP minced garlic
salt and pepper
Saute onion and garlic. Blend oats into a flour. Combine all ingredients in a bowl, then roll into balls and bake at 350 for 25 min. I like to use parchment paper.
2 cups BBQ sauce- I use Stubbs (most grocery stores including Walmart. It is all natural, has very little sugar and still tastes great)
1 1/2 cups no-sugar-added applesauce
optional: 1 TBSP chili garlic sauce (that red Asian sauce to add a little kick- we like things spicy!)
Toss your sauce in a crockpot, add the meatballs, and simmer on low for 3-4 hours. Sooooo good!
