Egg white frittata

A friend recently asked me for this recipe, and I can’t believe I haven’t posted it yet! It’s in the normal rotation around here, because there’s SO many ways to tweak it for a different flavor and the nutrition is insane! It’s good warm or cold, for breakfast or dinner. Top with salsa, or whatever “goes.”

For 1/4 of the entire frittata: 101 calories, 1.5g fat, 5.4g carbs, 18.6g protein. Basically you could eat the whole thing yourself and not even feel bad lol. (Calorie/macro count is before you add any of your mix-ins).

The base recipe is as follows:

Egg White Frittata

2 cups egg whites

1/4 cup almond milk

1/2 cup low fat cottage cheese

3 TBSP coconut flour

1/2 tsp each salt and pepper

Whisk all together in a bowl, then add your mix-ins.

Put in a pie plate/cake pan sprayed with Pam and bake at 350 degrees for 30 min+ (I usually need more time).

You may also put these in muffin tins!

Now the fun part…. Mix-in ideas: (before cooking)

broccoli + shredded cheddar

ham + swiss

turkey sausage, mushrooms + parmesan

spinach + goat cheese

turkey pepperoni, mozzarella, Italian spices (pizza)

tomatoes, green onion, peppers, chopped olives (Mexican)

bacon + chives

The possibilities are endless, and you can try something new every time! I try to use lean meats, lower fat cheeses, lots of veggies, experiment with spices, etc.
