high protein bread

I’d like to preface this by saying there’s nothing wrong with bread or carbs =)

Sometimes though, to hit your protein goals for the day, you want something other than meat. For me personally, I’m on low carbs getting ready for a show, and I do miss things like bread, and can rarely fit that into my diet.

Now sometimes I wonder if some of these recipes really ARE good, or if I’m at the point of desperation lol… But I’ve made it twice now and thoroughly enjoy it, so I figure it’s worth passing on for you to try and decide for yourself! I make a lot of high protein, low sugar “sweets,” and was kind of craving something more savory.

The recipe is broccoli protein bread from this website, and it’s actually very simple to make. There are NO grains, no gluten, no sugar, and it’s almost all protein!- (and you don’t taste the broccoli, it’s there to to just kind of hold everything together and add a little fiber). I throw everything in a blender, then bake it, and DONE. There are a few strange ingredients so I’ll explain below…

Ingredients:

1/2 cup whey isolate unflavored

1/2 cup pea protein unflavored

1/2 cup egg whites

2 large eggs

1/2 to 1 cup steamed broccoli (I buy steam packs from Costco and nuke them)

I think her original recipe is a little bland, so I also add:

1 tsp baking powder (I like it to fluff up a little more)

1/2 tsp garlic salt

Basil, oregano, pepper… any other herbs you want

2 oz. feta cheese crumbles (or ANY cheese would be delicious!)

Blend up, and bake at 320 degrees for 40 minutes. Makes 8 slices, each serving (with fat free feta added) is 73 calories, 1.4F, 1.2C, 12.6P !!

NOW- unflavored whey isolate and pea protein are not things I typically have on hand. I specifically ordered them for this recipe, from Vitacost.

I got this brand, but any will do.

So, this bread is good warm or cold, but keep it in the fridge. It’s pretty decent plain BUT I’ve also made sandwiches with thin slices! Try putting hummus, laughing cow cheese, low fat cream cheese, bruschetta, pesto, butter, anything savory and yummy!
